Ingredients

  • Ground Beef — 2lb 85/15 organic ($12.00)
  • Tomato Sauce — 6 Tbsp flavor builder ($0.20)
  • Whole Wheat Pasta — 1lb linguine or rotini ($2.00)
  • Plain Full Fat Yogurt — 2.5 cups 750g ($3.50)
  • Tahini — 0.5 cup creamy base ($2.50)
  • Onion — 2 medium diced ($0.50)
  • Pine Nuts — 0.25 cup toasted ($1.50)
  • Olive Oil — 3 Tbsp sauté/pasta ($0.25)
  • Garlic — 2 cloves crushed for sauce ($0.10)
  • Dried Mint — 4 tsp ($0.10)
  • Lemon — 0.5 squeeze ($0.05)
  • Spices — 1 batch 2 tsp allspice 1 tsp cinnamon 3 tsp salt 1 tsp pepper ($0.25)
  • Fresh Mint and Lemon — as needed garnish ($0.50)

Instructions

  1. 1Sauté and Brown — Sauté diced onions in 1 tbsp olive oil until soft. Add ground beef cooking until browned and dry. Stir in tomato sauce allspice cinnamon salt and pepper. Remove from heat.
  2. 2Boil Pasta — Boil pasta in salted water until al dente. Drain save 1/2 cup pasta water and toss with remaining 2 tbsp olive oil and the saved water.
  3. 3Whisk Sauce — In a bowl fork-whisk yogurt tahini crushed garlic dried mint lemon squeeze and salt until creamy.
  4. 4Assemble — Layer pasta and beef into containers. Drizzle with yogurt sauce and garnish with toasted pine nuts and fresh mint.

Tom's Notes

  • Texture Control — Use a fork to whisk the yogurt sauce rather than a blender to maintain a thick velvety mouthfeel.
  • The Beef Base — Cook the meat until all liquid has evaporated leaving behind a concentrated savory and aromatic beef base that absorbs the allspice and cinnamon perfectly.
  • Pasta Water Strategy — Reserve 1/2 cup of the starchy pasta water. Adding a splash to your pasta after draining prevents it from sticking together in the fridge.
  • Service Strategy — Pack the meat and pasta together but keep the yogurt sauce in separate small containers if you have them. Stirring the sauce in cold after reheating the beef and pasta prevents the yogurt from breaking.

Freeze the beef and pasta only — do not freeze yogurt sauce

Reheat

Microwave beef and pasta 2-3 minutes. Stir in cold yogurt sauce after reheating to prevent breaking
