Ingredients

  • Chicken Breast — 1.33lb cubed ($7.00)
  • Olive Oil — 1.5 Tbsp searing ($0.20)
  • Garlic — 3 cloves mashed ($0.15)
  • Sun-Dried Tomatoes — 0.5 cup packed in oil ($2.50)
  • Italian Seasoning — 1.5 tsp ($0.10)
  • Paprika — 1.5 tsp ($0.10)
  • Salt and Pepper — 1.5 tsp 0.5 tsp salt 1 tsp pepper ($0.05)
  • Orzo — 0.75 cup dry ($0.50)
  • Chicken Broth — 2.5 cups low sodium ($1.00)
  • Heavy Cream — 0.5 cup ($1.50)
  • Spinach — 2 large handfuls fresh ($1.50)
  • Parmesan Cheese — 0.5 cup grated ($1.90)

Instructions

  1. 1Sear Chicken — Heat olive oil in large skillet. Season cubed chicken with salt pepper Italian seasoning and paprika. Cook until browned. Remove and set aside.
  2. 2Sauté Aromatics — In same skillet sauté mashed garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant.
  3. 3Simmer Orzo — Stir in dry orzo and toast for 1 minute. Pour in chicken broth bring to a boil then reduce heat and simmer until orzo is tender and most broth is absorbed.
  4. 4Finish and Serve — Stir in heavy cream parmesan and spinach until wilted. Return chicken to the pan and toss until heated through. Divide into 4 containers.

Tom's Notes

  • Yield Scaling — This batch yields 4 dense protein-packed servings. The orzo swells significantly in the broth so ensure you use a skillet large enough to contain the expansion.
  • Sun-Dried Oil — Use a tablespoon of the oil from the sun-dried tomato jar for searing the chicken; it adds a concentrated savory flavor foundation that standard olive oil lacks.
  • Creamy Emulsion — Always stir the parmesan and heavy cream in after removing the pan from the heat. This prevents the sauce from breaking or separating keeping that velvety texture uniform through your reheating process.

Freeze

Freezes well — sauce may need a splash of broth when reheating to restore creaminess

Reheat

Microwave covered 2-3 minutes stirring halfway. Add a splash of broth if sauce has thickened
