- Butter — 1 Tbsp for green beans ($0.15)

Instructions
- 11. Heat the Oven and Season the Potatoes - Preheat the oven to 425F. Scrub the Yukon Gold potatoes and cut into 1-inch wedges leaving the skins on. Toss on a rimmed sheet pan with 3 tbsp olive oil 1 tsp paprika 0.5 tsp garlic powder 0.75 tsp salt and 0.75 tsp black pepper until evenly coated. Spread in a single layer.
- 22. Mix the Meatloaves - In a large bowl combine the ground beef beaten eggs finely chopped onion panko breadcrumbs 3 tbsp ketchup 2 tbsp Worcestershire 0.5 tsp garlic powder 0.75 tsp salt and 0.75 tsp black pepper. Mix with your hands until just combined — overworking makes the loaves dense. Divide into 6 equal portions and shape each into a small oval loaf.
- 33. Pan and Glaze - Brush a second sheet pan with 1 tbsp olive oil and arrange the loaves with space between them. Brush the tops with the remaining 3 tbsp ketchup.
- 44. Roast Together - Put both pans in the oven. Roast 30-35 minutes until the meatloaves reach 160F internal and the potato wedges are golden and crisp at the edges. Flip the potatoes once at the halfway mark.
- 55. Cook the Beans and Assemble - While everything roasts cook the frozen green beans according to package directions then toss with 1 tbsp butter and 0.25 tsp salt. Divide the potatoes and green beans among 6 containers and add one meatloaf to each. Let everything cool before sealing.
Tom's Notes
- Two Pans Beat One - It is tempting to crowd everything onto a single sheet pan but the meatloaves release juices as they cook and those juices steam the potatoes instead of letting them crisp. Separate pans means the potatoes get a real roast and the loaves get a clean glaze.
- Glaze Last Not First - The 6 tablespoons of ketchup are split for a reason. Half goes into the mix where it adds moisture and a little acidity and half goes on top in the last stage where it sets into a sticky glaze. Brush the tops before roasting rather than after so the sugar has time to caramelize.
- Portion Before You Shape - Divide the meat into 6 equal portions before shaping any of them. Eyeballing one loaf at a time leaves you with a tiny sixth one and uneven cook times across the batch.
