Ingredients
- Ground Chicken — 2lb 93/7 lean browned and drained ($8.00)
- Cooking Oil — 2 Tbsp oil of choice ($0.30)
- Jasmine Rice — 2.5 cups dry ($1.50)
- Bell Peppers — 2 whole diced ($2.00)
- Jalapenos — 1.5 whole sliced diagonally ($0.35)
- Yellow Onion — 0.5 whole thinly sliced ($0.25)
- Green Onions — 4 stalks whites and greens separated ($0.50)
- Garlic — 4 cloves minced ($0.20)
- Soy Sauce — 0.5 cup umami base ($0.80)
- Sesame Oil — 1 Tbsp toasted nutty finish ($0.30)
- Brown Sugar — 1 Tbsp sweetener ($0.10)
- Water — 1 Tbsp liquid volume ($0.00)
- Fresh Ginger — 1 tsp grated ($0.10)
- Red Pepper Flakes — 1 tsp heat ($0.05)
Instructions
- 11. Cook Rice - Prepare 2.5 cups dry jasmine rice according to package directions. Set aside.
- 22. Mix Sauce - In a small bowl whisk together the soy sauce toasted sesame oil brown sugar grated ginger red pepper flakes and water. Set aside and let the brown sugar dissolve fully.
- 33. Brown the Chicken - Heat 2 tbsp cooking oil in a large skillet over medium-high. Add the minced garlic and the white parts of the green onions and cook 1 minute until fragrant. Add the ground chicken and cook until fully browned breaking it apart as it goes. Drain any excess liquid.
- 44. Add the Peppers - Add the diced bell peppers sliced jalapeno and thinly sliced yellow onion to the skillet. Saute 3-4 minutes until the onion turns translucent and the peppers soften slightly but still hold some bite.
- 55. Glaze and Assemble - Pour the sauce over the chicken and vegetables and stir constantly for 2 minutes until everything is coated and the sauce thickens. Divide the jasmine rice and stir-fry evenly among 6 containers and top with the reserved green onion tops.
Tom's Notes
- Two Kinds of Heat - The jalapeno and the red pepper flakes do different jobs. The flakes bloom into the sauce and spread an even background warmth across the whole dish while the jalapeno slices stay distinct and give you a sharper hit wherever you bite one. Slicing on the diagonal gives you more surface area and makes them easier to spot in the container.
- The Onion Split - Saute the white stems of the green onion with the chicken to build an aromatic base then scatter the raw green tops over each container at the very end. The cooked whites add depth and the raw greens add a fresh snap that survives all week in the fridge.
- Sauce Discipline - Whisk the sauce in a separate bowl before it hits the pan. The brown sugar needs a moment to dissolve into the soy sauce and water or it will clump and glaze unevenly.
