Instructions
- 1Roast Broccoli — Preheat oven to 400F. Chop broccoli into florets toss with 1 tbsp salt and 3 tsp pepper and roast on a baking sheet until tender with slightly charred edges approximately 20 minutes.
- 2Form and Cook Patties — Combine 2lbs ground beef with 1 tbsp salt and 3 tsp pepper. Form into 12 equal-sized patties and cook in a skillet or on a grill to desired internal temperature.
- 3Melt Cheese — During the last minute of cooking evenly distribute 1.25 cups of shredded cheese across the patties and cover until melted.
- 4Assemble Containers — Divide cooked patties and roasted broccoli evenly into 6 containers.
- 5Day of Serving — Reheat broccoli separately in air fryer if available. Toast 1 slice of whole wheat bread and top with 1 tbsp of peanut butter to serve alongside.
